ST25 Lúa Tôm Thượng Hạng is an aromatic rice produced by the Vietnamese brand A An. It is made from the ST25 variety grown in ecological areas of the Mekong Delta where rice cultivation and shrimp farming are rotated on the same fields. Rice is generally cultivated during the rainy season when fresh water reduces soil salinity while shrimp are raised during periods of saltwater intrusion. Residues from the shrimp-farming cycle provide nutrients for the following rice crop. The use of chemical fertilizers and pesticides is restricted because their residues could harm the shrimp during the next production cycle. The producer describes this cultivation system as close to organic farming although the product is not presented as certified organic rice. The ST25 variety was developed in Sóc Trăng province and is known for its elongated grains and natural aroma. Its uncooked grains are long, slender, and translucent white with little chalkiness. During cooking, they develop a delicate aroma that may be reminiscent of pandan leaves and young rice grains. The cooked rice is soft, elastic, and moderately sticky while the grains generally retain their shape. Its flavor is mild and naturally sweet while the texture remains pleasant after cooling.
