Il Sincero is an extra virgin olive oil produced from the Moraiolo variety, an indigenous type that dominates the Umbria region. This oil is the result of careful selection of fruits from old olive groves, hand-harvested at an early stage of ripening to preserve freshness and flavor intensity.
It is processed using modern mechanical equipment, which ensures the preservation of all its nutritional and aromatic properties. The sensory profile of Il Sincero is characterized by a richness of herbal notes, including artichoke, cardoon, black pepper, and almond on the finish. This oil is ideal for use raw, such as drizzling over grilled meats, legume dishes, salads, or bruschetta, where its rich aromatic profile further enhances the flavor of the food.
Producer
Agraria Viola is a family-owned olive oil and winery with over 150 years of tradition, located in the heart of Umbria, in the city of Foligno. Their first mill was built in 1917 in Sant’Eraclio, and today it is managed by Marco and Andrea Viola.
Their approach combines respect for tradition with modern methods, using indigenous varieties such as Moraiolo, Frantoio, and Leccino, which grow on rocky and calcareous soils at altitudes of up to 500 meters. Their olive oils are the result of careful fruit selection, rapid processing, and cold pressing, preserving their nutritional properties and rich flavor.
