Bánh Tráng Đại Lộc is a traditional Vietnamese rice paper produced by the Ái Nghĩa agricultural cooperative. The product is associated with the culinary traditions of the Đại Lộc area in central Vietnam. Its main raw material is locally grown rice marketed by the cooperative under the Ái Nghĩa name. The ingredients consist of rice flour, water, and a small amount of salt, without added cassava starch. The product contains no preservatives. The rice is soaked for four to six hours and then ground with water into a smooth mixture. The mixture is filtered and lightly salted to help the sheets retain moisture, elasticity, and resistance to cracking. Thin layers of the mixture are steamed and then dried and inspected before packaging. The finished sheets have a distinct rice aroma, a mild flavor, and a somewhat fuller texture than the very thin rice paper commonly used for spring rolls. Before use, they are briefly moistened with water to become soft, flexible, and firm enough to hold the filling. They are traditionally used to wrap boiled pork, fresh vegetables, and aromatic herbs served with a fermented fish dipping sauce.
