Airas Moniz is a Spanish artisanal cheesemaker based in Chantada, in the province of Lugo, Galicia. The dairy was founded by three partners with the aim of transforming high-quality local milk into authentic artisanal cheeses, relying on their own herd of Jersey cows that graze for most of the year and are raised without silage. The entire production process, from milk production to cheese maturation, takes place at the dairy, ensuring complete quality control and full traceability. The range includes cheeses made from raw cow's milk, most notably Terra, a soft cheese, and Savel, a blue cheese, as well as the artisanal Chantada butter. The cheeses are matured under carefully controlled conditions, with some developing a natural microflora characteristic of the aging rooms, contributing to their complex aromatic profile and distinctive sensory characteristics.
