Anís Chinchón Dulce is a traditional Spanish anise liqueur produced by Alcoholera de Chinchón in the town of Chinchón, near Madrid. It is made by distilling green anise seeds (Pimpinella anisum) in copper stills, following a method that preserves the natural aromatic oils of the plant.
The liqueur is crystal clear and characterized by an intense aroma of anise and herbal notes. In the sweet (dulce) style, it contains a higher sugar content, which gives the spirit a smoother and rounder taste compared with the dry version.
On the palate it is sweet, aromatic and well balanced, with a pronounced anise flavor and a warm finish. The production process typically includes macerating the anise seeds in alcohol before distillation, allowing the essential oils to fully develop.
Anís Chinchón Dulce is often consumed as a digestif after meals, served neat or chilled, and it is also occasionally used in cocktails and traditional Spanish desserts. It remains one of the most recognized examples of Spanish anise liqueur and a characteristic product of the Chinchón distilling tradition.
