Allagash Curieux is a beer based on Allagash Tripel, which after primary fermentation spends about seven weeks aging in bourbon barrels, gaining a distinctive character and added complexity. The foundation is a golden Belgian tripel, while the time in barrels introduces notes of vanilla, coconut, oak, and caramel, with the fruity esters from the yeast still present.
The ABV is around 10.2%, yet the alcohol remains well-integrated thanks to the soft texture and rounded aroma contributed by the bourbon influence. The aroma reveals honey, vanilla, and biscuit, with a subtle warm oak note in the background.
The flavor is layered: it begins with a mild grain sweetness, transitions into bourbon notes, and finishes dry with a warm alcoholic expression. Despite its strength, the beer stays balanced and drinkable, with moderate carbonation that refreshes the palate.
Curieux is unfiltered, giving it natural color and fullness. Best served at 8-10 °C (46-50 °F) in a tulip-shaped glass to allow the aroma to open up.
