Arzberger Aurum is a premium Alpine cheese from the Austrian region of Almenland. It is made from high-quality cow’s milk sourced from Almenland pastures, an area known for its preserved natural environment and rich flora, which directly shape the cheese’s aromatic profile.
What makes this cheese distinctive is its maturation in natural mountain tunnels (Stollen), where stable temperature and humidity allow for slow and even development of both texture and flavor. Aurum represents a long-aged selection, often matured for more than 12 months, resulting in notable depth and complexity.
The texture is firm yet elastic, with fine, evenly distributed crystals that indicate advanced maturity. The flavor is full and layered, with notes of warm milk, butter, and nuts, complemented by subtle caramel tones that intensify toward the finish.
Saltiness is moderate and well balanced by the natural sweetness of the milk. The aroma is clean, elegant, and persistent, without harsh or aggressive notes.
The cheese performs particularly well at room temperature, where its full aromatic range is revealed. It is most often enjoyed on its own with rustic bread, but it also pairs very well with dry white wines, more mature Grüner Veltliner, or light-bodied red wines with good acidity.
