Almnäs Tegel is an artisanal, hard-pressed cheese with a natural rind produced by Almnäs Bruk in the Västra Götaland region of Sweden. The name “Tegel,” meaning “brick” in Swedish, refers to its distinctive rectangular shape and its historical connection to traditional craft techniques once practiced on the estate.

The cheese is made from raw cow’s milk sourced from the farm’s own organic herd and is characterized by a washed, slightly reddish rind developed with the presence of Brevibacterium linens. Its texture is compact and smooth, sometimes showing small eyes, while the paste color varies with the season of production.

Aromatically, it offers sweet and fruity notes, accompanied by hints of caramel and nuts. On the palate, the flavour is full yet precise and well balanced, with a clear dairy core and gentle salinity.

The cheese is aged for an extended period, often between 18 and 30 months, during which it gains additional depth and complexity. Almnäs Tegel stands as a strong expression of traditional Swedish cheesemaking, clearly conveying the character of raw milk, long maturation, and local terroir.
