Sayal Honey is a seasonal Saudi honey produced by Alnahal Alrefee from the nectar of the sayal tree (Acacia seyal, also known as Vachellia seyal). Sayal is a thorny desert acacia that grows in the dry valleys and plains of the Arabian Peninsula, and its honey belongs to the traditional category of Saudi acacia honeys.

Its distinctive character is shaped by the short sayal flowering season. Bees collect nectar while the tree’s small yellow flowers are in bloom, meaning that the quantity and characteristics of each harvest may vary according to the season and conditions in the flowering area.

The honey has a thick, uniform texture and a golden-to-amber color that may differ between harvests. Its flavor is pronounced but less intensely sweet than that of many lighter blossom honeys, with a warm aroma, subtle floral and woody notes, and a clean finish. It can be enjoyed directly from the spoon or served with Arabic bread, tahini, cheese, and nuts.
