No.6 X-Type is a sake produced by Aramasa Shuzō in Akita City, Akita Prefecture, Japan. It is the flagship standard release in the No.6 series, dedicated to Kyōkai No. 6 yeast, which was discovered at the brewery. The “X” comes from eXcellent, reflecting its position at the top of the range. It is made as an unpasteurized junmai nama genshu, without added distilled alcohol or dilution with water after brewing.
It is crafted from rice grown in Akita Prefecture, rice kōji, and water, using the traditional kimoto method and fermentation in wooden vats known as kioke. The rice variety is not fixed, as the brewery prioritizes the quality of each harvest.
It has an elegant, clean character, combining freshness, gentle fullness, and a balance of sweetness and acidity. Extensive rice polishing gives it a more refined expression, while No. 6 yeast remains central to its aroma and flavor profile.
