Mozzarella nella Mortella is a traditional cheese from the Cilento region in Campania, Italy, known for its unique flavor and distinctive wrapping method. This cheese is made from fresh cow’s milk and shaped into long, flat strips that are carefully wrapped in fresh myrtle leaves - locally known as "mortella." This practice dates back to the time when shepherds used myrtle to naturally preserve the cheese during transport from mountain pastures to the coast.
Today, it contributes to the cheese’s characteristic aromatic profile. Azienda Agricola Le Starze, located in Pattano, in the municipality of Vallo della Lucania, is one of the few producers that still uphold this ancient technique. Their farm spans 130 hectares of untouched nature in the heart of the Cilento National Park, where cows, goats, and sheep roam freely and graze on natural pasture.
During periods when grazing is not possible, the animals are fed exclusively with alfalfa. All products are made without the use of industrial ferments, preserving the authenticity and natural flavor of the cheese. Mozzarella nella Mortella from Le Starze has a slightly elastic texture and a rich, milky taste with subtle notes of green grass, lemon, and cedar imparted by the myrtle leaves.
