Castagne Secche Garessine BIO are organic dried chestnuts produced by Azienda Agricola Marco Bozzolo in Viola Castello, Piedmont, Italy. The name Garessina refers to a group of local chestnut varieties grown in the Tanaro, Mongia and Casotto valleys.
The chestnuts are dried using a traditional method in the family’s 19th-century stone and wood drying house, which was restored in 2018. The process takes about 40 days and gives the chestnuts a mild smoky note. The dried chestnuts are pale straw-yellow in colour.
The producer recommends rinsing the chestnuts, placing them in cold water with a little salt and a few bay leaves, then simmering them for about 40 minutes. They can be served on their own or used in other recipes.
