Mắm Ruốc Loại Thượng Hạng is a fermented paste made from tiny marine shrimp by the family-run Mắm Bà Ba production facility in Long Điền in Bà Rịa–Vũng Tàu province. Its primary ingredient is fresh tiny shrimp that are selected and inspected before processing. The shrimp are mixed with salt and left to ferment naturally according to a traditional family method. During fermentation, their proteins gradually break down and create a pronounced umami character. The fermented mixture is ground to produce a thick and relatively uniform paste. The product also contains sugar and monosodium glutamate which soften its intense saltiness and complement the flavor of the fermented shrimp. The paste has a pinkish-brown to purplish-brown color and a strong aroma characteristic of this type of product. The designation Loại Thượng Hạng indicates a premium category within the producer’s range but does not represent a legally defined quality grade. It can be additionally seasoned with garlic, chili, lemon, or sugar and served as a dipping sauce. It is commonly paired with boiled meat, rice paper, noodles, and tart fruits such as green mango. The paste can also be used as a seasoning base for soups and rice-noodle dishes.
