Kefalograviera PDO from Bafas is a traditional Greek hard cheese with Protected Designation of Origin status, produced according to PDO specifications for the Epirus region. It is made from sheep’s milk or a blend of sheep’s and a small proportion of goat’s milk, giving it a rich, slightly piquant character.

The cheese has a firm yet elastic texture with small openings and a well-balanced flavor profile combining milky, nutty, and gently salty notes. It is aged for a minimum of three months, during which it develops greater aromatic depth and structure.

Kefalograviera PDO can be enjoyed as a table cheese, grated over pasta and dishes, or used in classic Greek preparations such as saganaki, where it forms a golden crust while remaining soft inside.
