Graviera Kritis PDO from Balantinos is one of the most representative traditional cheeses of Crete, produced in accordance with the strict rules of the Protected Designation of Origin. It is made mainly from sheep’s milk, with a possible small addition of goat’s milk, sourced from herds raised in the mountainous areas of western Crete, where natural grazing and Mediterranean vegetation shape the character of the milk.

The cheese has a firm yet elastic texture with a fine, compact structure, and a balanced flavor profile marked by gentle sweetness and pronounced nutty, milky notes that deepen with aging. The maturation process lasts several months and is carefully controlled to achieve harmony between aroma, texture, and taste.

Younger wheels are milder and softer, while more mature versions develop greater depth and complexity. Graviera Kritis PDO melts well, making it suitable both as a table cheese and for use in warm dishes.

In traditional cuisine, it is often grated over pasta, pies, and baked dishes. Balantinos produces this cheese by combining modern dairy technology with knowledge passed down through generations.
