Pichtogalo Chanion PDO by Balantinos is a traditional fresh cheese from the Chania region of Crete, made from sheep’s and goat’s milk and protected under PDO status, which ensures that both production and raw materials are strictly linked to the defined geographic area. It is a soft, rindless cheese with a high moisture content, resulting in a dense yet spreadable texture that can be slightly grainy due to minimal processing.

The flavor is balanced and clean, combining mild acidity with subtle sweetness and a light salty note, giving it a fresh lactic character often compared to thick yogurt. The production process is relatively short and avoids intensive handling, as the curd is allowed to drain naturally rather than being pressed or aged for long periods.

This preserves its soft consistency and makes it suitable for immediate consumption. In culinary use, it is closely associated with Cretan dishes such as dakos, boureki, and bougatsa, where its creamy structure and gentle acidity complement other ingredients without dominating them.
