Baylan is a historic Istanbul patisserie and chocolate producer founded in 1923. The business was established by Filip Lenas, a pastry chef from Epirus who arrived in Istanbul in 1919, together with his cousin Yorgi Kiriç. The first patisserie opened in the Beyoğlu district under the name Loryan, which was later changed to Baylan. From the beginning, its production drew on European confectionery techniques, particularly French and Austrian traditions of making cakes, creams, chocolates, and ice cream. During the 20th century, Baylan opened branches in Karaköy and Kadıköy, which became regular meeting places for Istanbul’s artists, writers, and journalists. The Kadıköy patisserie is particularly notable for preserving much of its historic interior and the brand’s original character. Baylan produces pralines, truffles, chocolate bars, dragees, and filled chocolates, including its traditional chocolate-covered cherry. Its range combines long-established recipes with products developed for contemporary retail, many of which are available in branded gift boxes and individual packages. The Lenas family managed the patisserie until 2009, when Baylan became part of Altınmarka Group, the owner of the Kahve Dünyası chain and a major cocoa and chocolate producer. Following the change in ownership, additional locations were opened in Istanbul, while Baylan’s historic products and recipes remained part of its offering. Today, Baylan operates as both a patisserie and a retail chocolate brand rooted in Istanbul’s 20th-century confectionery culture.
