Caspian Beluga Caviar is a caviar from the Russian producer Beluga Farm, obtained from Caspian beluga raised on its own farm in the lower reaches of the Volga River, in the Astrakhan region. Its production involves a long rearing period, as female beluga first produce roe at 16–18 years of age.
It features large pearls in grey and pearl-grey shades, a rich flavour, and a creamy, buttery texture, with a finish reminiscent of nuts and cream. Tender pearls and pronounced creamy notes particularly distinguish the version harvested using the traditional method.
Beluga Farm also produces this caviar using a method that keeps the fish alive. This version has firmer, more resilient pearls that separate easily, with a more delicate finish and subtle notes of cream. The difference between the two versions relates to the maturity of the roe at harvest, which influences its texture and flavour.
