Domaine Pinson

4.8 ·

Domaine Pinson is one of the oldest family-owned wineries in Chablis, with a winemaking heritage dating back to 1640. For nearly four centuries, the Pinson family has cultivated vineyards in some of the most prestigious areas of the region, building a reputation for producing wines that faithfully reflect the unique character of Chablis. Today, the estate is managed by Laurent Pinson and Charlène Pinson, who continue the family tradition while embracing modern and sustainable viticultural practices. The domaine covers approximately 14 hectares of vineyards, including parcels in renowned Premier Cru and Grand Cru appellations such as Les Clos and Les Preuses. The vines are planted on the region’s distinctive Kimmeridgian limestone soils rich in fossilized marine sediments, which contribute to the wines’ signature minerality and freshness. Vineyard management focuses on environmentally responsible practices, with no herbicides and minimal chemical intervention. Grapes are harvested by hand to ensure optimal quality and careful selection. In the cellar, fermentation and aging are carried out using a combination of stainless-steel tanks and older oak barrels, allowing each vineyard site to express its individual identity. Domaine Pinson’s wines are known for their precision, elegance, and balance, displaying aromas of citrus, green apple, white flowers, and flint, supported by vibrant acidity and a long mineral finish.

Domaine William Fèvre

4.7 ·
Domaine William Fèvre is one of the cornerstones of Chablis, embodying a deep respect for its unique terroir. The modern chapter began in 1959, when William Fèvre declared his first vintage, setting a course toward uncompromising quality. Over the decades, the estate has carefully built a mosaic of nearly 90 parcels, with more than 30 hectares classified as Premier and Grand Cru. Sustainability lies at the heart of their work, with practices rooted in organic farming and recognized by the HVE3 certification. Each vine is cultivated with care, allowing the wines to faithfully express the limestone hillsides overlooking the Serein River. Since 1998, the estate has been part of Domaines Barons de Rothschild (Lafite), a partnership that reinforced its prestige and ambition. From classic Chablis to Premier and Grand Cru labels, the style reflects mineral purity, finesse, and remarkable aging potential. Balancing tradition, innovation, and exceptional vineyard holdings, Domaine William Fèvre continues to stand as a benchmark of elegance and authenticity in Burgundy Chardonnay.

Best Yonne Beverage Types

01

Chablis

4.1 ·

Chablis is the name of the wine region in northern Burgundy, but it is also the name of a white wine coming from this very region. Chablis is made with 100% Chardonnay, but unlike other Chardonnay wines, it rarely utilizes oak-aging, resulting in different taste profile and style. It has white flower and citrus aromas with light-bodied and dry flavors of pear, salinity, and minerality. Among the most desirable traits of Chablis is a long finish of flint-like minerality and high acidity, which makes the wine exceptionally well for pairing with creamy sauces, chicken, trout, bass, quail, clams, cod, halibut, or scallops.

02

Petit Chablis

n/a ·

Petit Chablis is a French white wine appellation (AOC – Appellation d'Origine Contrôlée) created in 1944, crafted exclusively from Chardonnay grapes in the northern reaches of Burgundy's Chablis region. As the introductory level in the Chablis hierarchy, it comes from vineyards located on higher, outer slopes, where Portlandian limestone soils contribute to the wine's vibrant, youthful character. In the glass, Petit Chablis has a pale golden color, sometimes with greenish highlights. Its aromas are clean and fresh, featuring white flowers like hawthorn or acacia, along with lemon, grapefruit, and a bit of wet stone or flint in the background. Occasionally, you might notice hints of peach or other soft white fruits. This wine is light-bodied and lively on the palate, with bright acidity that gives it a refreshing feel. It usually starts with a zesty first impression—what wine folks call a "spirited attack"—but quickly settles into a smoother, rounder texture. A subtle salty or iodine note can sometimes appear on the finish, typical of wines from this cool, limestone-rich region. Overall, Petit Chablis is about balance—freshness, a bit of body, and a clean, persistent finish. Meant to be enjoyed young, ideally within two years of bottling, Petit Chablis is a natural match for oysters, shellfish, grilled white fish, goat cheeses, tripe sausages, eggs, or simply as a crisp aperitif.

03

Saint-Bris

n/a ·

Saint-Bris is a French appellation located in Auxerrois (Yonne) region of Burgundy that produces aromatic white wines exclusively from Sauvignon Blanc and Sauvignon Gris. The wines produced in the area range from pale straw to golden. Although they are quite versatile, they tend to display aromas of citrus fruits, peaches, and some exotic nuances reminiscent of lychee. Notes of undergrowth and spices can also be present. They are mostly enjoyed young though some may be left to age. Lively and aromatic, these wines are an excellent match to goat cheese, fish, crustaceans, and oysters, but they also make an excellent aperitif.

04

Irancy

n/a ·

Irancy is a French appellation located in the Yonne department of Burgundy. The wines produced in the area are mainly based on Pinot Noir, while the official guidelines also allow the addition of César, which can make up a maximum of 10%. Irancy wines tend to have lively tannins and display aromas of red and dark fruit that are accompanied by notes of violets and spices. With age, aromas of leather and undergrowth may also be present. These wines can match rich meat dishes, casseroles, charcuterie, terrines, and pâtés, as well as soft-centered cheese.

About this ranking

TasteAtlas food rankings are based on the ratings of the TasteAtlas audience, with a series of mechanisms that recognize real users and that ignore bot, nationalist or local patriotic ratings, and give additional value to the ratings of users that the system recognizes as knowledgeable.
