Arepa reina pepiada

Arepa reina pepiada is one of the most famous arepa varieties in Venezuela. This type of arepa is stacked and filled with a combination of avocado, shredded chicken pieces, lime, coriander, mayonnaise, and optional peas. The dish was invented by Heriberto Alvarez, an empanada kiosk owner. The name is concocted in honor of Susana Duijm, the first Venezuelan representative to win the Miss World crown. In those days, curvy women like Susana were called pepiada, so reina pepiada (curvy queen) is a logical choice for the name of this flavorful arepa variety.

Guacamole

Guacamole is a world-famous buttery delicacy dating back all the way to the Aztec empire of the 1500s. It’s a healthy blend of ripe, mashed avocados, onions, chiles, optional tomatillos and selected seasonings such as sea salt and coriander. The star of this incredibly simple dish is the avocado, high in unsaturated fat, potassium, vitamins, minerals and protein, its name stemming from the Aztec ahuacatl, meaning testicle or testicle tree, which is why it was believed that it was an aphrodisiac by the Aztecs. Guacamole is sometimes prepared in the molcajete, a traditional Mexican mortar and pestle where onions, chiles, and salt are ground to a paste and added to the coarsely mashed avocados. Of course, guacamole is only as good as the avocados it is prepared with, and among the best are the nutty and creamy Hass and smooth Fuerte avocados. It is usually accompanied by corn chips, nachos or tortillas on the side, so guacamole is typically enjoyed as a dip. Regardless of its position on the table, the only important thing is to serve it fresh before it oxidizes and changes its vivid green color to a darker brown hue.

Salsa de palta

Salsa de palta is a healthy Peruvian dip made with a combination of ripe avocados, tomatoes, onions, ají amarillo paste, and a splash of Peruvian lime juice. The ingredients are simply mashed together, and the dip is ready for consumption. Locals say that the secret to a good salsa de palta lies in the usage of perfectly ripe avocados without any dark spots. It is recommended to serve salsa de palta with fried cassava, tequeños, or various meat and fish dishes.

Tuna Tartare

Tuna tartare is an elegant starter originating from Los Angeles. The dish is made with a combination of raw tuna, avocado, egg yolks, green peppercorns, capers, chives, tarragon, mustard, olive oil, lemon juice, salt, and pepper. It was invented in 1984 by chef Shigefumi Tachibe at the Chaya Brasserie when a few customers came in wanting beef tartare, but one of them didn't eat beef, so the chef tried tuna, and it was an instant success. Nowadays, it's usually served as a visually attractive appetizer with crackers or toast.

Rainbow Roll

Rainbow roll is a type of uramaki or upside-down sushi, where the rice is on the exterior, wrapped around nori seaweed that holds the other ingredients on the inside. This sushi variety is typically made with rice, nori, tuna, salmon, avocado, and cucumber. Once the uramaki has been assembled, the slices of fish and avocado are carefully arranged on the top of the roll, which is then sliced into pieces. The name of this sushi variety refers to the alternating colors of fish and avocado which are reminiscent of a rainbow. Serve it with soy sauce and wasabi on the side for the best experience.

Cemita is a popular Mexican sandwich originating from Puebla, consisting of a fresh, sesame seed-sprinkled bun filled with tiny strands of shredded cheese, avocado slices, pickled jalapeños, papalo (herb with a unique flavor), and cutlets of meat such as pork, beef, or chicken, all fried in breadcrumbs. The sandwich can be additionally stuffed with tomatoes, lettuce, and mayonnaise. The name cemita refers both to the bun and the sandwich.

Triple sandwich is a Peruvian staple consisting of thin slices of bread, avocado slices, tomato slices, sliced hard-boiled eggs, and mayonnaise. The crust is trimmed from the bread slices, while the avocado slices are usually seasoned with salt, pepper, and lime juice. The sandwich is constructed by putting mayonnaise on each bread slice, then layering the rest of the ingredients. Once assembled, the sandwich is cut into two or four triangles and it's ready to be served. Of course, there are variations, so feel free to add shredded chicken, ají chili peppers, or tuna to this simple Peruvian sandwich.

Sopa de aguacate

Sopa de aguacate is a traditional soup originating from Central Mexico, but it's popular throughout Latin America. Although there are numerous variations, this pale gren soup is usually made with a combination of avocados, chicken stock or caldo de pollo soup, chipotle chili peppers, and fried pieces of tortilla. The avocados are blended with the stock into a smooth purée, then heated gently so that the mixture doesn't boil. The soup is served immediately, while still warm, and it's topped with the tortilla pieces and chipotle chili peppers torn into pieces. Other versions of the soup also add onions, lemon juice, garlic, or bell peppers into the mix.

Es teler

Es teler is a refreshing combination that usually consists of jackfruit, avocado, coconut, condensed milk, syrup, and shaved or crushed ice, but the variations may include other ingredients such as flavored jelly and different types of fruit. This dessert, which is often classified as a drink, is mostly associated with Java, and it's believed that it originated sometime in the 1960s. Es teler is served in bowls, and since the fruit is either diced or sliced, the dessert is usually enjoyed with a spoon.
