Bubble and squeak

Bubble and squeak is a traditional dish consisting of potatoes and green vegetables. Originally, cabbage was used as the main vegetable, but modern cooks might use Brussels sprouts or any other kind of vegetables along with potatoes. The combination of potatoes and vegetables is mashed together, fried, and traditionally served alongside cold meats. The potatoes used in the dish are often leftovers from a Sunday roast. The earliest mention of the dish is found in an 1806 cookbook by Maria Eliza Ketelby Rundell. Bubble and squeak peaked in popularity during World War II, when food was scarce. The name of the dish refers to the noises it makes while it is frying in the pan, although some say that it refers to unusual stomach noises after its consumption.

Cauliflower cheese

Cauliflower cheese is a traditional dish consisting of boiled cauliflower florets doused in a sauce made from flour, milk, butter, nutmeg, and mature cheeses such as cheddar. The whole concoction is then baked in the oven and can be served either as a vegetarian main meal or as a flavorful side dish, accompanying roast meat and potatoes. It is believed that cauliflower cheese was first prepared in the 17th century, when the vegetable was first introduced to the United Kingdom. Today, the dish is also popular as a pre-made baby food.

Stovies

Known in full as stoved tatties, this Scottish one-pot dish of potatoes slowly stewed with onions, carrots and meat like mutton or beef was traditionally prepared to make use of the Sunday roast leftovers. Stovies come in two versions: the simpler barefoot or barfit stovies are made solely with potatoes and onions stewed in roast dripping, whereas the so-called high-heelers include plenty of meat. In Aberdeen, stovies are traditionally served with oatcakes and milk.

Clapshot

Another traditional accompaniment for the famous Scottish haggis, the Orcadian clapshot or clapshaw is basically a more elaborate version of neeps and tatties: a dish of mashed potatoes and yellow turnip, typically mixed with milk, some butter or dripping, and chives, while some recipes even include onions. As a side dish, clapshot is also often served with oatcakes, mince, sausages, and a number of other meat dishes, although it can also be enjoyed on its own.

Glamorgan Sausages

Glamorgan sausages are not your typical sausages – that is, they're shaped like sausages and have the word sausage in their name, but contain no meat at all, so in order to find some middle ground, they're often dubbed vegetarian sausages. This Welsh veggie sausage is made with a combination of Caerphilly cheese, leeks, and breadcrumbs. Due to the fact that there is no sausage casing, eggs are used to bind the mixture so that it doesn't fall apart. The mixture is shaped into a sausage, and it is then fried. Some people like to add spring onions, nutmeg, thyme, parsley, or mustard into the mixture. These vegetarian sausages should be fried gently so that they don't brown too quickly, in which case they might not be cooked all the way through. Glamorgan sausages should be served hot, ideally paired with a mustard dip and a glass of cold beer on the side.

Beans on toast

Rumbledethumps can be topped with some cheddar, and it is served either as an accompaniment to various meat dishes or enjoyed on its own. This traditional dish hails from the Scottish Borders, while the alternative version from Aberdeenshire is called kailkenny.

Punchnep

Punchnep is a traditional vegetable-based dish originating from Wales. The dish consists of root vegetables that are cooked, then mashed together and mixed with butter or cream. The most popular combination includes potatoes and baby white turnips, but carrots, peas, and parsnips are also often used, either separately or together with the potatoes. Before serving, the mash is often pricked with the handle of a wooden spoon, and each hole is then filled with cream before the punchnep is served hot.
