Beyaz Fırın is a historic family-owned bakery and patisserie from Istanbul whose origins date back to 1836. The business was established by the Stoyanof family after they moved to Istanbul from the Balkans. The first bakery opened in the Balat district and became known as Bulgar’ın Fırını, meaning the Bulgarian Bakery. Initially, it focused primarily on producing simit, poğaça, bread, and other everyday baked goods. The family business was later expanded through the opening of bakeries in Karaköy, Sarıyer, and Üsküdar. In 1920, Dimitri Stoyanof took over the bakery in Üsküdar, after which the family gradually shifted its operations toward Kadıköy. During the shortages of flour and sugar in the 1940s, the bakery survived largely through the production of acıbadem kurabiyesi, a traditional biscuit made with eggs, sugar, hazelnuts, and a small amount of bitter almonds. This biscuit has remained one of the products most closely associated with the brand’s history. Its contemporary range includes bread, pastries, cakes, biscuits, chocolates, pralines, and various savory products. Part of the assortment is sold in branded packaging, particularly biscuits, crackers, chocolates, and gift boxes. The company remains under the management of the founding family, while the business has expanded across five generations to several locations in Istanbul. Today, Beyaz Fırın combines traditional bakery production with contemporary confectionery and hospitality.
