Bánh Tráng Gỏi Cuốn Thượng Hạng is a Vietnamese rice paper produced by Bình Tây Food for preparing fresh gỏi cuốn rolls. The sheets are made from rice flour, cassava starch, water, and table salt. Rice flour provides a mild flavor and the basic structure while cassava starch improves elasticity and reduces the risk of tearing during wrapping. Before preparation, the surface of each sheet is briefly moistened with clean water without prolonged soaking. After a few moments, the rice paper becomes soft, flexible, and sufficiently adhesive to hold the shape of the roll. It can be filled with fresh vegetables, aromatic herbs, rice noodles, eggs, beef, pork, or seafood. The mild and moderately salty flavor of the wrapper does not overpower the filling or accompanying sauces.
