Bodegas San Francisco Javier is a contemporary project based in Jerez de la Frontera, founded by Peter Sisseck and Carlos del Río González-Gordon with the aim of presenting sherry, and especially fino, as a serious wine with a clear sense of terroir. The bodega builds on the region’s traditional knowledge but applies it in a modern context, focusing on grape origin and work with individual vineyards, which is uncommon in a sherry landscape traditionally dominated by blending across multiple sources.
