Brasserie 3 Monts is a French family-owned and independent brewery located in Saint-Sylvestre-Cappel in French Flanders. Its family history began in 1920 when Rémi Ricour and his wife Marie Savage purchased an existing brewery. The company initially operated as Brasserie Ricour-Savage and later became Brasserie Ricour. During the 1980s, its name was changed to Brasserie de Saint-Sylvestre. The present name Brasserie 3 Monts was adopted in 2019 in recognition of the producer’s best-known beer. Four generations of the same family have managed the brewery over more than a century. Pierre Ricour modernized production using knowledge acquired at the brewing school in Nancy and introduced new equipment and distribution methods. Together with his sons François and Serge, he developed 3 Monts and restored the production of top-fermented beer at the brewery. Its recipe has remained largely unchanged for more than four decades, while the distinctive yeast culture is preserved as a family secret. The brewery produces several ranges, including 3 Monts, Héritage, Du Moulin and Houthakker. Its production combines traditional Flemish brewing methods with modern equipment and emphasizes the importance of malt, hops and its proprietary yeast culture. Brasserie 3 Monts is regarded as the last historic brewery in French Flanders to have remained continuously operational. The French government awarded it the Entreprise du Patrimoine Vivant label in recognition of its specialized production knowledge and preserved brewing heritage.
