Browar Kormoran is an independent regional brewery that has operated in the Polish city of Olsztyn since 1993. It is located in the Warmian-Masurian Voivodeship whose ingredients and culinary heritage are frequently reflected in its products. The brewery developed during a period when the Polish beer market was increasingly dominated by large industrial companies. Its production is based on traditional brewing methods and relatively small batches that allow it to develop a diverse selection of styles. Its principal ingredients include underground water, barley and wheat malt, hops and brewing yeast. Some recipes also incorporate rye, oats, spelt and other grains. The brewery works with local and regional producers of honey, fruit and Polish hops. Part of its hop supply comes from Kłodnica in the Lublin region where varieties such as Marynka, Sybilla and Lubelski are cultivated for Kormoran. The range includes pale and dark lagers, wheat beers, non-alcoholic products, fruit-flavoured beers and different top-fermented styles. Baltic porters hold a particularly important place in the portfolio and have contributed significantly to the brewery’s reputation. Its best-known products include Porter Warmiński, Imperium Prunum, Świeże, Kormoran Złoty and the low-alcohol beer 1 na 100. The Podróże Kormorana series was introduced to explore styles that had not previously formed part of the brewery’s traditional range. Kormoran also produces limited releases that may mature for approximately two years before reaching the market.
