Pietro Dal Cero Amarone della Valpolicella is the most prestigious red wine of Ca' dei Frati, created as a tribute to Pietro Dal Cero and his vision of refined, terroir-driven winemaking. Produced in the Valpolicella DOCG from a traditional blend of Corvina, Corvinone, Rondinella, and a small portion of Croatina, the wine is made using the classic appassimento method, with carefully selected grapes dried to achieve concentration and depth.

Aging takes place over an extended period in barrique barrels followed by long bottle maturation, resulting in a wine of remarkable balance and polish. Aromatically, it shows intense notes of dried cherry, black cherry, and plum, layered with dark chocolate, sweet spices, balsamic nuances, and subtle hints of tobacco and coffee.

On the palate it is full-bodied, structured, and elegant, with ripe, finely grained tannins and vibrant acidity that prevents heaviness. The finish is long, complex, and harmonious, confirming its capacity for long aging.
