Chosco de Tineo IGP by Cárnicas Arango is a traditional Asturian cured meat product belonging to the category of smoked and dried sausages, produced under strict geographical indication specifications. It is made from selected cuts of pork, mainly shoulder and tongue, which are chopped into coarse pieces and seasoned with a simple blend of salt, paprika, and garlic.

After a short marination period, the mixture is stuffed into natural pork casing, giving it its characteristic rounded and slightly irregular shape. A defining stage of production is cold smoking, typically lasting at least a week and using local woods such as oak, chestnut, or beech, which contributes to its distinctive aromatic profile.

This is followed by drying and stabilization, resulting in a firm yet juicy texture and a compact internal structure where visible meat pieces highlight its rustic character. The flavor is predominantly smoky, with mild spiciness and warmth from the paprika, while remaining balanced and meat-forward without excessive fat.

It can be consumed sliced as a cold cut or gently cooked, often served with boiled potatoes or incorporated into traditional dishes from western Asturias. Within Arango’s production, the product maintains key artisanal elements while benefiting from controlled conditions that ensure consistency.

Closely tied to the terroir and culinary heritage of the Tineo area, it reflects a combination of simple ingredients and a well-defined process that shapes its texture, aroma, and identity.
