Queijo Serra da Estrela DOP is a Portuguese raw sheep’s milk cheese produced by Casa Agrícola dos Arais in Vide Entre Vinhas, in the municipality of Celorico da Beira. It belongs to the traditional matured cheeses of the Serra da Estrela region and carries Protected Designation of Origin (DOP) status.
It is made using artisanal methods from the milk of the farm’s own flock of Bordaleira Serra da Estrela sheep. The milk is coagulated using a plant-based coagulant derived from cardoon (Cynara cardunculus), followed by slow draining of the curd and maturation.
It has a soft to semi-soft, creamy, buttery texture, a white to pale yellow colour, and a uniform paste with few or no eyes. Serving it with plain bread allows its rich texture to take centre stage.
