Caseificio dei Barbi is a traditional Tuscan cheese dairy located in Montalcino and operating as part of the historic Fattoria dei Barbi estate. Its origins date back to the mid-19th century, when sheep’s milk cheese production began at Molin del Fiore, a facility regarded as the oldest continuously operating cheese dairy in Montalcino.
