Caws Teifi Cheese is a family-owned artisanal cheesemaker based in the village of Glynhynod, Ceredigion, in western Wales, specializing in cheeses made from raw cow's milk. The company was founded in 1982 by John and Patrice Savage-Onstwedder together with Paul van Werkhoven after relocating from the Netherlands to a farm in the Teifi Valley. Cheese production began in the early 1980s using a centuries-old Gouda recipe that was adapted to Welsh milk and local conditions. The company operates from a family farm, using milk sourced from nearby farms in Ceredigion, with production based on traditional cheesemaking methods and minimal milk processing to preserve its natural characteristics. Over the years, it has developed a diverse range of semi-hard, hard, and washed-rind cheeses, with Teifi, Celtic Promise, and Saval among its best-known varieties. Particular emphasis is placed on the use of raw milk, which the producer believes contributes to greater complexity of flavor and a more distinctive character. In addition to cheesemaking, the farm also operates a farm shop and a visitor centre where guests can learn about the cheesemaking process and sample a variety of cheeses.
