Antep Fıstıklı Lokum by Cemilzade is a traditional Turkish delight made with pistachios from the Gaziantep region. The product is also listed by the brand as Çifte Kavrulmuş Antep Fıstıklı Lokum meaning double-cooked Turkish delight with pistachios. It is made from pistachios, water, sugar, cornstarch and citric acid. The base mixture is obtained by slowly cooking sugar, water and starch until it develops a thick and elastic consistency. A substantial quantity of pistachios is added during preparation and distributed throughout the confection. The pistachios contribute a nutty aroma, mild saltiness and a crunchy texture that contrasts with the soft base. The double-cooked designation refers to the extended cooking of the mixture which produces a firmer and more concentrated texture than standard Turkish delight. Production takes place in small kettles with a capacity of approximately 20 kilograms reflecting the company’s small-batch approach. Due to its high pistachio content the flavor is less uniformly sweet than that of conventional fruit-flavored and aromatic varieties. The product is among the best-known and most frequently selected Turkish delights in Cemilzade’s assortment.
