Phở Khô are dried Vietnamese rice noodles produced by the Chi Lăng Cooperative in Đắk Lắk Province. The product is made exclusively from selected white rice. Unlike the thin strands of bún, phở noodles are shaped into flat and slightly wider ribbons. The rice is first cleaned and soaked before being ground into a smooth batter suitable for shaping. The prepared batter is processed on an enclosed production line to give the ribbons a uniform width and thickness. After shaping, the noodles are dried and packaged, reducing their moisture content and allowing them to be stored without refrigeration. They are firm when dry but become soft and elastic after preparation. The noodles have a mild rice aroma and neutral flavor that does not overpower the broth or other ingredients. According to the manufacturer’s instructions, they should be placed in a bowl and covered with boiling water or hot broth. After approximately 30 seconds, they are ready to serve. They can be combined with beef, chicken, spring onions, aromatic herbs and various seasonings. The noodles are also suitable for stir-fried dishes with vegetables, meat and sauces.
