Conspiracy Chocolate is a Hong Kong-based artisanal bean-to-bar chocolate maker specializing in producing chocolate entirely in-house, from raw cocoa beans to finished chocolate bars. The company was founded by Swiss-Israeli couple Céline Herren and Emanuel Andrieu, who combined European chocolate-making traditions with inspiration drawn from Mediterranean and Asian flavors. After initially operating from a small home workshop in Sai Ying Pun, production was relocated to a licensed chocolate workshop in Wong Chuk Hang, where all chocolates continue to be handcrafted in small batches. A defining feature of the company is its complete control over every stage of the production process, including roasting, grinding, conching, tempering, and molding, allowing each batch to develop its own distinctive flavor profile. In addition to classic dark chocolates with high cocoa content, the company also creates innovative flavor combinations featuring ingredients such as Sichuan pepper, oolong tea, mezcal, and sea salt. Its portfolio further includes couverture chocolate for professional culinary use, cocoa-based beverages, pralines, seasonal collections, and limited-edition releases.
