Castagne Secche are dried chestnuts produced by Consorzio della Castagna di Valle Camonica in Paspardo, Lombardy, Italy. They are made entirely from chestnuts grown in Valle Camonica, where chestnut cultivation has long been part of the local food tradition.

The chestnuts are dried with warm, dehumidified air, then carefully selected and sorted by hand. This drying method does not impart additional flavours, allowing the chestnuts’ natural taste to remain prominent.

The dried chestnuts can be boiled and used in both sweet and savoury dishes.
