Đà Vị is a Vietnamese producer of dried rice noodles from the mountainous district of Na Hang in Tuyên Quang Province. It officially operates as Hợp tác xã Nông nghiệp Đà Vị, an agricultural cooperative registered in 2019. The cooperative is based in Phai Khằn Village in the former Đà Vị Commune. Its production draws on the long-standing tradition of the Tày people, who originally prepared dried noodles for family meals and local celebrations. The main ingredient is the local Bao Thai rice variety grown on the terraced fields of the mountainous Na Hang area. The cooperative has gradually supplemented traditional manual production with machinery for milling the rice, draining and mixing the rice mixture, shaping the strands, and drying the noodles. This has increased production while preserving the local recipe and the natural maturation of the rice. Its range includes the traditional white Bún Khô Đà Vị noodles and the multicolored Bún Khô Ngũ Sắc Đà Vị variety. The colors are obtained from local plants and ingredients such as different types of leaves, turmeric, and moringa. No synthetic colors or other food additives are used in the production of the multicolored noodles. Đà Vị noodles are distinguished by their slightly thicker strands, mild rice aroma, and elastic texture after cooking. The products are sold in Tuyên Quang Province as well as in Hanoi, Thái Nguyên, and Phú Thọ.
