Stille Nacht is a cult Belgian Christmas beer brewed by De Dolle Brouwers, known for its exceptionally high wort density and powerful, complex character. It is produced through an extended boil and the use of pale malts and white candy sugar, which create a concentrated sweetness and an alcohol content of around 12%.
The beer pours a golden-amber to orange hue with a rich, persistent head that highlights its intense aroma. The nose features layers of honey, freshly baked bread, orange peel, and toffee, accompanied by fruity esters from the brewery’s distinctive yeast.
The flavor is bold and multi-layered: honeyed and caramel notes blend with stone fruits like apricot and peach, subtle spice, and noticeable alcoholic warmth. Despite its richness, the beer finishes relatively dry thanks to well-balanced bitterness from Poperinge hops.
