Pecorino Crosta d'Oro is a premium, cave-ripened sheep's milk cheese from De’ Magi, renowned for its exceptional flavor and texture. This cheese is carefully matured following ancient Tuscan traditions, starting with pasteurized sheep's milk that is hand-salted and placed in a unique "scodellata" mold.

After 60 days of pampered care, it is transferred to underground caves to age for a minimum of 150 days. The result is a cheese with a striking golden rind, the product of being treated with grape-seed oil during aging.

It has a sweet, moderately savory, and slightly acidic taste, with no overwhelming sharpness, making it incredibly pleasant to eat. The cheese has a crumbly texture, and its flavor is balanced with notes of hay, nuts, and delicate barn aromas.

Pecorino Crosta d'Oro is ideal for a variety of culinary applications, from being served on a cheese board to pairing with red or white wines like Brunello di Montalcino or Amarone. It also works beautifully in risottos, pasta dishes, and over fresh meat carpaccio.
