Distillery 291 is a small craft distillery located at the base of the Rocky Mountains in Colorado Springs, Colorado. It was founded in 2011 by Michael Myers, a former fashion photographer from New York City, with the goal of creating whiskey that embodies the taste, aroma, and spirit of the Wild West.

The distillery produces grain-to-bottle whiskeys, utilizing copper pot stills and aging the distillates in deeply charred American white oak barrels. The process often concludes with the addition of toasted aspen staves, which contribute to the unique character of their products.
