Bánh Tráng Gỏi Cuốn Mr Rice is a Vietnamese rice paper produced by Duy Anh and intended for preparing fresh rolls. It is sold under the Mr Rice brand which includes various rice-based products for domestic and export markets. The product is made from rice flour, tapioca starch, water and salt. Rice flour gives the sheets a mild and neutral flavor while tapioca starch contributes elasticity and strength. According to the producer and distributors the product contains no preservatives, artificial colors or borax. The sheets are circular and measure 22 centimeters in diameter. Their size makes them suitable for larger rolls containing several different ingredients. Before use each sheet is briefly and evenly moistened with water and placed on a flat surface to soften. It can be filled with boiled pork, shrimp, other seafood, tofu, rice noodles, vegetables and fresh herbs. Once moistened the sheet develops a soft, flexible and slightly sticky texture that helps the roll retain its shape.
