Le Neufchâtel AOP is one of the oldest cheeses in France and a true icon of Normandy’s dairy heritage. This traditional soft cheese with a white bloomy rind (croûte fleurie) is produced by Fromagerie Graindorge, located in the picturesque town of Livarot, in the heart of Normandy.

Protected by the AOP (Appellation d’Origine Protégée) label, Le Neufchâtel was first mentioned as early as the 6th century, making it the oldest known cheese from the region. It is made from cow’s milk, which may be raw, thermized, or pasteurized, depending on the version. The texture is rich and creamy with a slight graininess, while the flavor is characterized by a subtle saltiness and delicate milky aroma.
