This cheese is a hard type with a golden yellow color and a rich flavor profile that includes sweet and delicate notes, celebrated for its fine aroma and distinctive aftertaste. Graviera Naxou P.D.O. is made primarily from cow’s milk, with up to 20% sheep's and goat's milk, using traditional rennet.
It's a versatile cheese suitable for various culinary uses, including as a table cheese, grated, or in fried dishes. The cooperative ensures high-quality production by adhering to traditional cheese-making techniques, and the cheese undergoes a meticulous production process. This includes pasteurization, curd formation, pressing to remove moisture, and a maturation period of at least 72 days on wooden shelves under controlled conditions.
Following this, the cheese is brined, dried, and then aged further in cooling chambers before distribution.
