Tepeztate is an artisanal mezcal from El Jolgorio, originating in the Mexican state of Oaxaca. It is made from Tepeztate agave (Agave marmorata) and released in small, numbered batches, whose origins and producers may vary between editions.

This agave is distinguished by its exceptionally slow growth: the product page states that it takes 25–35 years to reach maturity. It grows on steep, rocky slopes, sometimes extending almost horizontally from cliffs, while its broad leaves help collect water.

During artisanal production, the agave is roasted in earthen pit ovens, crushed using a stone wheel known as a tahona, fermented in open vessels, and double-distilled. Back Bar Project’s current specification lists an alcohol content of 48% ABV.

It has a pronounced earthy character, with hints of fruit, mild salinity, and notes of anise.
