Chosco de Tineo IGP by Embutidos La Aldea is a traditional Asturian sausage made from carefully selected cuts of pork, mainly shoulder and tongue, seasoned with a simple blend of salt, paprika, and garlic in accordance with the specifications of its protected geographical indication. After marination, the meat is stuffed into natural pork casing, giving it a rounded and slightly irregular shape, while the interior reveals visible coarse pieces of meat that emphasize its rustic character.

A defining stage of production is smoking over wood such as oak or chestnut, which lasts several days and develops its characteristic aromatic profile. The texture is firm yet juicy, and the color ranges from lighter tones to a deeper red depending on the amount of paprika used.

The flavor is distinctly smoky, with mild spiciness and a balanced, meat-forward profile without excessive fat. It can be consumed sliced as a cold cut or cooked, most commonly served with boiled potatoes, which is a typical preparation in western Asturias.
