Susumu Koyama’s Chocology is a collection of four chocolate bonbons by Es Koyama, a Japanese chocolatier based in Sanda, Hyogo Prefecture. Introduced in Japan in 2025 under the theme Echoes of the Inner World, the collection draws inspiration from four fragrances created by Francis Kurkdjian for the Parisian perfume house Indult Paris.

Susumu Koyama studied how each fragrance evolved over time and recreated that progression in chocolate using tea, fruit, honey, and spices. Isvaraya combines aged pu-erh tea, jasmine tea, and plum with an 18-year-aged Nanko Ume plum liqueur. Tihota brings together the warm aromas of Tahitian vanilla, tonka bean, and rum, complemented by jasmine tea and orange blossom honey. Manakara pairs lychee, raspberry, and Bulgarian Damask rose with green cardamom and Madagascan vanilla. Cuir combines Earl Grey tea, hazelnut, black cardamom, and clove, with yuzu and dark balsamic vinegar adding brightness and acidity.

The bonbons can be tasted in the order presented in the collection, beginning with the tea and fruit notes of Isvaraya, moving through the warm vanilla of Tihota and the floral and fruity Manakara, and ending with the spiced finish of Cuir. Koyama designed each bonbon so that its aromas unfold gradually and shift through the finish.

Es Koyama is a Japanese pâtisserie founded by Susumu Koyama in 2003 in Sanda, Hyōgo Prefecture. It is known for its signature sponge cake roll, Koyama Roll, and for the chocolate bonbons and bars developed at its chocolaterie, Rozilla.

Koyama pairs cacao from different origins with ingredients such as Japanese gyokuro tea, red perilla, and fragrant osmanthus blossoms. For his Real Gyokuro bar, he uses tea from Kyōtanabe, near Kyoto, and mixes tea leaves into the white chocolate for a delicate crunch. Each Susumu Koyama’s Chocology collection brings together bonbons around a single theme, while Underground Chocolate Award features individual creations that explore different ingredient pairings.

Sanda remains the home of Es Koyama’s pâtisserie and its dedicated Rozilla chocolaterie. The company has presented its collections internationally at Salon du Chocolat in Paris and continues to develop its range in Japan through seasonal releases.
