Finca Deborah Echo Geisha is a Panamanian specialty coffee of the Geisha variety, grown by Jamison Savage at Finca Deborah in the mountains of Volcán, in Chiriquí province, at around 1,900 meters above sea level.
The ripe coffee cherries are picked by hand and depulped. The beans then ferment in sealed steel tanks flushed with carbon dioxide. What sets the Echo process apart is that some of the removed cherry skins, known as cascara, are added back to the tank during carbonic maceration. After about 50 hours, the beans are rinsed and slowly dried on shaded raised beds.
The coffee has citrusy bergamot notes, floral hibiscus notes, and a silky mouthfeel.
