Finca La Rosala’s Almendra Marcona AOVE & Sal consists of hand-roasted Marcona almonds seasoned with extra virgin olive oil and salt. The product is made in Calzada de Calatrava, in the Spanish province of Ciudad Real. It uses peeled Spanish Marcona almonds, recognizable by their rounded shape and softer texture. According to the label, almonds account for 94 percent of the product, while four percent extra virgin olive oil and less than two percent salt are added. The almonds are first washed by hand and then seasoned with a carefully measured amount of salt. They are arranged in a single layer on horizontal trays and coated with a thin layer of olive oil. During roasting, they are turned by hand every eight minutes to ensure even processing. This method produces a crisp surface, while the interior retains the characteristically delicate and slightly buttery texture of Marcona almonds. The almonds are oven-roasted rather than deep-fried, leaving their surface relatively dry. The olive oil contributes subtle fruity and grassy notes, while the salt accentuates the almonds’ natural sweetness. The product can be served as a standalone snack, as part of an appetizer selection, or as an addition to salads, cold creamy soups, and desserts.
