Slattato by Fontegranne Eros Scarafoni is a contemporary expression of a traditional cheese originating from the Montefeltro area, rooted in artisanal production and the use of raw cow’s milk. It is made from whole, unpasteurized milk with calf rennet, and after a short initial aging phase the cheese undergoes a distinctive immersion in warm whey, a step that directly shapes its texture and aromatic profile.

The cheese has a cylindrical form with a slightly rough, straw-yellow rind, while the interior is soft, friable, and evenly structured with small eyes. The flavor is pronounced yet balanced, marked by gentle acidity and a subtle bitter finish, while the aroma reveals notes of fresh grass, almond, and chestnut.

Slattato reaches its optimal expression after around 60 days of aging and is best served cut into cubes to preserve its naturally crumbly texture. This cheese clearly reflects Fontegranne’s philosophy, centered on high-quality milk from its own pastures, manual processing, and the preservation of local cheesemaking traditions from the Marche region.
