Palauet is an artisanal goat’s milk cheese produced by Formatges Camps in Catalonia, Spain. Made from pasteurized goat’s milk, it is matured for approximately four to eight weeks, allowing it to develop a balanced flavor profile and a smooth, buttery texture.
Shaped into a cylindrical wheel of around 600 grams, Palauet is designed to appeal to both casual cheese lovers and more experienced connoisseurs thanks to its approachable yet refined character. The cheese offers delicate dairy notes, mild nuttiness, and a creamy mouthfeel that pairs particularly well with sweet fruit, nuts, and non-acidic red wines.
