Forrey & Galland is a producer of handcrafted chocolates and confectionery based in Dubai whose name originates from a historic Parisian chocolate house established in 1912. Isabelle Jaouen and Vincent Moret revived the name and heritage of the former company in Dubai in 2008. The new company retained French handcrafted chocolate-making techniques while adapting its range to flavors and ingredients associated with the Middle East. Its chocolates are produced in the company’s atelier in the United Arab Emirates, where they are shaped, filled, decorated, and packaged by hand. Recipes incorporate ingredients such as rose, dates, pistachios, saffron, and rahash, a regional sesame-based confection. The range includes pralines, chocolate truffles, chocolate bars, macarons, stuffed and decorated dates, and various small confections. Some collections combine French ganache and praline-making techniques with local flavors and traditional ingredients.
